Kielbasa Pasta – Family Favorite

As I was preparing this last night it dawned on me that I definitely needed to share it.

This recipe is so easy, so fast, and everyone loves it.

It can also be complemented with so many different types of side dishes or can be eaten as a one dish dinner.

Additionally, it is very easily manipulated. You can add, subtract, or substitute ingredients according to flavor profiles or food items on hand.

Ingredients:

12 oz. Kielbasa, sliced

1 small onion diced

12 oz. Dry Pasta (I like using Campanelle)

1 can diced tomatoes or Rotel for a spicy flair

2 cups chicken broth

1/2 cup heavy whipping cream

1/2 cup cheddar cheese

Preparation:

  1. Pan fry the kielbasa over medium heat, about 5 minutes, add the onion and continue cooking until onion is translucent.
  2. Add the uncooked pasta, tomatoes, chicken broth, and whipping cream. Bring to a boil.
  3. Cover, reduce heat, and simmer for 15 minutes.
  4. Remove from heat and stir in the cheddar cheese until melted.

This meal is great with any kind of salad as a side dish. I also serve it with any variety of roasted vegetable…always love broccoli or cauliflower. A bowl of crisp cool grapes is a nice addition especially if you made your dish spicy. Enjoy!
